Grab your blender and let’s get started!

Prep Time: 10 mins

Servings: 2–3

Portion Size: About ½ to ¾ cup per serving

Ingredients

  • 3 ripe bananas, sliced and frozen

  • ¼ cup smooth peanut butter

  • 2 tbsp maple syrup

  • ½ tsp vanilla extract

  • ¼ cup non-dairy milk (such as almond or coconut milk)

  • Optional toppings: peanuts, dark chocolate chips, fresh fruit

Directions

  1. Blend the bananas. In a blender or food processor, blend the frozen banana slices until they are smooth and creamy.

  2. Add the remaining ingredients. Add the peanut butter, maple syrup, vanilla extract, and non-dairy milk to the blender and blend until smooth and well-combined.

  3. Freeze the mixture. Pour the mixture into a freezer-safe container and freeze for at least 2 hours, or until firm.

  4. Soften before serving. After 2 hours, remove the ice cream from the freezer and let it sit at room temperature for a few minutes to soften.

  5. Scoop and enjoy. Scoop the peanut butter banana ice cream into bowls or cones and enjoy! You can also top it with additional fresh fruit, peanuts, or dark chocolate chips, as desired.
