Made with protein-rich quinoa, black beans, and a mix of vibrant spices, this dish is not only delicious but also nutritious and filling. Plus, it’s all made in one pot, making cleanup a breeze!

Portion Size: ~1 ½ cups per serving
Ingredients
1 cup of rinsed quinoa
14.5 oz canned tomatoes
1 canned black beans, drained
1 cup of water or vegetable broth
1 green bell pepper
1 jalapeño
1 garlic clove
1 onion, chopped
1/2 cup frozen corn
1/2 tsp cumin powder
1 tbsp chipotle seasoning
1/4 tsp black pepper
Salt to taste
Directions
Heat the oil. Add 1 tbsp of olive oil for cooking.
Sauté the vegetables. Add the chopped onion, garlic, green pepper, and jalapeño. Sauté until the onion is soft.
Incorporate beans and tomatoes. Add the black beans, canned tomatoes, corn, and seasonings.
Add the quinoa. Stir the quinoa into the mixture.
Simmer. Add the vegetable broth, cover the pot, and let it cook over low heat for 15-20 minutes.
Finish and serve. Add salt and lemon to taste. Serve with avocado.
